Rave Restaurant Review from SusieQ

I was told about a great little restaurant and was in San Ignacio where I had a chance to try it out. I've gone past it many times and didn't know what a gem it was. I had the special......lasagne rolls with a kale salad and garlic bread and a caramel flan for dessert with a sour sop juice for $25 BZD (Editor's note: Do the math! That's less than US$13!). The meal was excellent and the price very reasonable. The food was cooked right in front of me. I loved the friendly and cozy atmosphere. The name of the place is Crave House of Flavors and it's right behind Burns Avenue. I can't wait to try out some more dishes by Chef Alejandro!!

It's that time again! The "King of Fruits" is back. It's Mango Season in Belize!! Here's a recipe that will make your taste buds dance a mango tango. If you can't find Labneh in your neck-of-the-woods, substitute with cream cheese.

Mango and Labneh Pita Bread Recipe

Prep Time: 15 mins
Cook Time: 4 mins

Ingredients:

1 Golden Mango peeled and diced in 1/2 inch cubes
1 tbsp Fresh Lime Juice
1 tbsp Honey
1/2 tsp Cayenne Pepper
2 tbsp roughly chopped Fresh Mint
1 pkg La Popular Pita Bread
2/3 cup Olive Oil and Sea Salt Labneh

Instructions:

Preheat barbecue to medium heat.
Stir together mango, lime juice, honey, cayenne and mint; set aside.
Grill pita bread for 30 to 60 seconds per side or until golden with grill marks; transfer to cutting board. Divide labneh between pita breads; spread evenly to cover. Top with mango mixture; cut each pita bread into 4 pieces. Serve immediately.

Makes 8 servings

Helpful Tips:

Do not chop mint in advance since it oxidizes and turns black.
Add more cream cheese and cut back on cayenne.

Kleptomaniacs are loose on Half Moon Caye! In the 4,000-strong bird-nesting colony on Half Moon Caye, red-footed Boobies steal the show while Great Frigatebirds try to steal the Boobies' meal! This practice of stealing another animal's prey is known as kleptoparasitism.

As sacred destinations go, the largest Mayan site in Belize offers its share of mystery and history. Caracol was totally abandoned in 1050. The jungle encroached and overtook this ancient Mayan city until 1937 when it was rediscovered by a woodcutter!
